Cheese Story

Cheese Knowledge

Cheese good for lactose indigestion

Most of the cheese can be eaten by people with lactose intolerance. This is because in the process of making natural cheese, the liquid part of milk is separated from the solid part of the curd, and most residual lactose is filtered along with the lactose. Some of the remaining lactose is also consumed by good bacteria already in the cheese. As a result, most ripe cheeses, such as cheddar, switzerland, contain less than 5% lactose compared to battery milk. Also, mature cheese such as parmesan and sharp cheddar contains little lactose, and processed cheese contains only a tiny amount of lactose.
