Mascapone cheese

Mascapone cheese is an Italian cream cheese made in the northern Italian province of Lombardi.



Unlike other cheeses,
Mascapone has little cheese-specific smell and is made of whipped cream separated from milk, so it contains more than 80 percent fat.

Also, the cheese itself has a very soft texture because it has a light, subtle sweetness and high fat content.



Because of these characteristics, it is often used for salads, drinks, and especially for baking, and tiramisu is a typical product is
tiramisu.



The method for manufacturing Mascapone is to heat fresh cream with a milk fat content of 38% or more in 80 to 82 degrees Celsius.

Add tartaric acid or lemon juice to form a curd. After that, cool the curd for 20 to 30 minutes and drain it.

Store in a cold place or refrigerator for more than 12 hours to complete the cream-type mascara cheese.



Mascapone that is made has a high water content, so it should be consumed as soon as possible after production.
